A one-pan chicken and potato roast with herbs ~ an easy and delicious, no-fuss meal..

One of my favorite Christmas songs and here is a recipe to match it.

Christmas, as we all know is all about love, family, friends, giving, happiness…and good food! With all the meals one has to prepare for their near and dear ones it would be wonderful to have a one-pan roast dish with any choice of sides for a cozy dinner.

Previously I have recreated Laura Vitale’s Caramel Flan many times and each time it turned out super delicious.  You can see the recipe here. Soon after, I made her One-pan Chicken and Potato roast and it was a hit! And I would make it again for the occasion of Christmas. With warm buttered bread rolls, some wine and dessert, it will be one delicious dinner.

Ingredients you will need:

2 lbs / 9 pieces (approx) chicken thighs and drumstick
¾ – 1 cup  olive oil
3 tbsp Dijon mustard
3 tbsp paprika
4-5 stems of fresh rosemary, finely chopped
2 tbsp dried thyme
3 tbsp onion powder
2 ½ tbsp garlic powder
1-2 fresh lemon, halved and de-seeded
1-2 tbsp freshly ground black pepper
6-7 cloves of garlic, skin on
Salt according to taste

10-12 baby Potatoes, halved
2 tbsp olive oil
1 tbsp fresh rosemary
1 tsp freshly ground pepper
salt according to taste

fresh parsley for garnishing

Method for cooking:

1) To prepare the chicken, make 2-4 slits on the chicken pieces and sprinkle some salt and mix well.

2) Now to prepare the marinade in a large bowl, mix all the following together : olive oil, dijon mustard, paprika, fresh rosemary, dried thyme, onion and garlic powder, ground black pepper and lemon juice. Add the chicken pieces to this and the whole garlic cloves. Cover everything in the marinade well and keep aside for 2 hours. You can marinate overnight in the refrigerator as well. The squeezed lemon wedges can be added too.

3) Prepare the potatoes a little before cooking. Mix the potato halves with olive oil, fresh rosemary, ground pepper and salt to taste.

4) Preheat the oven to 400 – 425 F (adjust according to your oven). Place the chicken pieces, potatoes, garlic cloves and lemon wedges (optional) closely on a baking dish. Bake for 1 hour till chicken is fully cooked and potatoes are golden brown. Garnish with fresh parsley on top and serve!

Before baking; the chicken and potatoes are placed in one pan. (Make sure to bring the chicken back to room temperature before doing this!)

  1. I really should not have gone through this post as now I am only craving for this chicken and potato herb roast! I am literally drooling. Looks like a really easy recipe but I am sure it will not turn into this :-(. .Sigh!
